Take a picture of you SOLENOID, DO YOU HAVE IT CONNECTED CORRECTLY per my PICTURE? If the solenoid CLICKS when you press the START BUTTON there on only a couple things WRONG.
1. Your battery is weak can have a bad cell or two and when a load it put on it drops like a rock , test with a jumper on the battery. 2. The Solenoid is bad 3. The STARTER is bad, you can test this also with a jumper hook the positive to the post on the starter and the neg just hold in your hand and touch the motor to ground it. If the starter spins then your back to BAD SOLENOID or BAD BATTERY(IF It does not spin bad starter) ... NO TWO WAYS ABOUT IT BRO. Alleyoop

When you touch both terminals on the SOLENOID if the battery is good it should spin your starter. Does it spark when you touch both terminals? If you have a car or a friend with a car, jump the battery BUT do not have the car running. Alleyoop

Since you unplugged the killwire from the CDI then that eliminates the CDI being grounded. So now it is testing time and to do that you have to have a Mult Meter.
There are a few things you can check, First make sure there is a ground wire from the motor to the frame. Then check the Boot Cap sometimes if old the brass clips inside break and do not grab the Plug. Also the Boot cap itself make sure it is nice and tight on the COIL WIRE(the boot caps screw on into the wires inside the coil wire). Then check the connections on the coil itself make sure they are on nice and tight. Then after that you will need to check for Vac from the stator when you crank it(multi meter time). So at this point it could be the STATOR, PICK UP COIL, CDI, COIL, BOOT CAP, PLUG... Alleyoop

Well if he is saying that he is getting spark and it is just sitting there not running and the stator is not turning then HE HAS a DC cdi which is fed 12V with the KEY ON and so in that case it would be the CDI that is bad. Alleyoop

OK, if you release the brake and start button and the STARTER keeps spinning the SOLENOID is stuck and keeping on sending 12 volts to the starter. So if that is the case you need a NEW SOLENOID, to stop it give the SOLENOID a whack on top to disengage the contact inside.
Also regarding the spark DID YOU BY CHANCE change the stator or mess with the wiring from the STATOR? If so check the WIRE going to the TRIGGER SIDE of the CDI, you may have the wrong wire from the stator plugged into the connector going to the Trigger Port on the CDI. Alleyoop

Welcome Boksie , good to have you on the forum. Bummer on having to find out the motor was shot and having to tear the motor apart. But I see your handy and will not be a problem. And by all means pop up pictures of your build. Alleyoop

If the CDI is AC fed from the stator then yes the motor will keep running without a battery. IF the CDI is DC meaning it is fed from the Battery when you turn the KEY ON then if you disconnect the battery or the battery is bad the motor will not run. Alleyoop

Yes, gas sitting for a long time looses it power and motors have a hard time igniting it. Good job Ride Safe Alleyoop

Yes, the speedometers are all off on these scoots, they will register higher mph than your really going. I marked mine like this on the outside of the speedo: Does it start to register as you use up the gas or does it stay registering EMPTY? Alleyoop

Would help if you could put up a VIDEO of the what you call knocing. If its the Variator weights they make a rattling sound NOT a knocking sound. Alleyoop
