Well, due to boredom i decided to retire to the kitchen. yesterday i made 6 loaves of bread and 24 dinner yeast rolls. all completely homemade. (with my left hand,lol) fortunately for me, i have a machine that kneads dough because with one hand, bread making would be impossible. Friends and relatives benefited from this sudden burst of inspiration.
JR, m/c indicated in a thread that you are a prize winning jelly and jam maker. too bad we don't live closer to each other. we could have a booth at the fair where we sold homemade jams and bread and really clean up!

Jr, I love to cook. I don't use any recipes. I season and experiment, I never measure, just throw in what i think it needs. Always turns out good. It is one of the talents given to me by God, and sorely put on a back burner (pun intended) till my hand heals (ever try chopping onion with one hand?) If I was young again, I probably would have gone to culinary school instead of nursing, and opened my own gourmet restaurant. I hate doing dishes though. (Thank heavens for automatic dishwashers). Of course, if I had my own restaurant, someone else would be doing cleanup. ;D

Chopping onions with one hand or both is not required for me. I avoid onions as much as possible. While in college I did a survey on public feeding, military, restaurants, etc. and found that about 15% of the population is bothered by onions. For some the fresh onion has a pungent oder that is offensive, others have a problem digesting the acids or whatever are in the onions. I do eat some lightly used very well cooked onions as that is the way my wife cooks. I prefer not to do that as I think even when cooked into a broth they have a way of spoiling the natural flavors of most foods.
Anyway, I see that most restaurants ignore the public warnings about onion problems for many people so I always order with no onions. At times I still get ignored and when I protest that there are onions on this dish they respond that they are on the side and I don't have to eat them. My wife will help and take the onions on to her dish so the oders and juices are farther away.
Enough rant for now.

Sorry JR but the idea of a Squash cookie just scares me. I am game to eat almost anything. Deep fried Twinkles, Heck I've eaten a fried Rattle Snake with a Mint Juniper. For some reason that Squash cookie scares me. I would try one if ya told me it was just a cookie. I have to side with M/C on the squash thing. I would rather have a onion. I like onions

Oh Mac, I must commend you!!! Even with a bread maker doing it one handed is quite a feat!!!! I hope your riding Fred very soon. (Why does that sound so dirty?) I'll do the dishes for ya!!!! One rule in my house is whoever cooks doesn't clean the dishes. That's left for the ones that eat. Ya gotta work for a good meal

Bong You know the idea doesn't sound too sweet I got to admit but neither did this one: allrecipes.com/Recipe/Zucchini-Pie-II/Detail.aspxSo I'll give you my first report on the cookies. I thought they were out of their mind when it said it would make a lot of cookies but they were right, just a tablespoon spreads out and makes a big cookie! Now I used half white flour and half wheat flour and I also added raisns, my next batch I will add a little more oil to make the more moist and also a tad more brown sugar or buy some honey. Now I take and peel the squash just like a potato and then I take a old time hand grater and grate the outer hard squash flesh for the two cups that is called for. Do not try to use the soft inside flesh where the seeds are, When you mix the squash up in the batter it blends in and you do not even know it's there. I've had a bumper crop of zucchini and yellow squash and I had to find something to do with them? The zucchini pie tastes and cuts just like your favorite apple pie! Even smells like apple pie! Again take the zucchini peel them just like a potato, cut them in half long ways and the scrape out the seeds and soft inner flesh leaving the solid firmer outside flesh to cut up and it cuts up just like apples! Use 5 cups of zucchin instead of 4 like the recipe calles for amd add a touch more sugar. My family likes this pie so much that I canned 4 quarts of it for a pie later will enjoy it this winter for sure!

jr, i looked at the ingredients in that zucchini pie and it seems like it would be fabulous! So since you say it is, i believe i am going to have to try that one. it seems too good to pass up!
