Good evening from old hot and dry Arkieland! 106F as I type and a lot of folks gardens around here have just flat burned up.
Myself I'm hanging in there for mainly two reasons, one I planted my stuff later and it didn't get hit with the floods that were here earlier in the year and two I'm hitting it with lots of water, in fact will turn the sprinklers on again tonight.
Right now I'm getting lots of cucumbers, yellow squash and zucchini:
Yep that's 3 five gallon buckets of zucchini and MC's favorite veggie yellow squash and some big ones at that! Not pictured is the 5 gallon bucket of cucumbers.
Even with it so hot I'm getting while small tomatoes, peppers and will get some corn soon.
My watermelon, cantaloupe, spaghetti squash and pumpkins all look good and should be OK if I keep them watered!
Now in the morning I'm putting these two to work picking what's in the background purple hull peas!
These are my two grandchildren who have recently moved in and they have got to be converted from city slickers to country folk! Now they are good eaters and haven't said no to any garden veggie I've put on the table yet but tonight may be a test?
Right now with it so hot I put a chicken in the old rotisserie and she's just about done:
On the stove is the last of my cabbage I raised, it's been simmering for over an hour with a good chunk of salt pork in it, got corn on the cob too along with cornbread and fresh sliced tomatoes and cucumbers!
Also got two zucchini pies cooked, let me repeat that zucchini pie! Simple and delicious!

Now I messed up and by accident planted 5 hills of zucchini and I've picked so much that when the neighbors see me walk up the first thing they say is NO JR NO MORE ZUCCHINI! LOL!
But how many 7 and 9 year old kids do you know that will beg you "grandpa will you cook another zucchini pie?" Long story short you can really have some fun with your friends and they'll swear it's homemade apple pie!

Can you say lemon custard? That's what this pie will remind you of. Now the good thing about this pie recipe is this, most people know that if you let a squash get too big it's seedy and tough and not very good to eat but with this recipe it doesn't matter!
You can do your squash one of two ways, either just mash them with a potato masher after cooking which gives the pie a more coarse texture or like I do put them seeds peelings and all into the blender or food processor and just make the pulp into a puree, then do s the recipe says and cook!
Again it'll fool a lot of people and they would never guess it's squash!
So since I've got so many and still picking them I'm going to dice the zucchini up and freeze one pie portions, I actually do 5 cups of zucchini instead of the 4 recommended and also I'm going to prepare one pie portions of the yellow squash recipe with sugar and all and freeze too.
That way when old man winter comes on a cold crisp day I'll get the old pie plate out and thaw and cook! Tomorrow if I have enough energy after canning peas all day it's going to be this recipe next:
